Do I need a bamboo steamer?

No. A stable metal basket or heatproof plate raised inside a lidded pot works when steam can circulate.

Why is water dripping onto steamed food?

Condensation is collecting on the lid. For delicate custards or buns, cover the food or wrap the lid as the recipe directs.

How do I know the steamer has enough water?
