Fix Rendang
What should I do when rendang starts burning?
Turn the heat off and do not scrape burnt material through the pot. Transfer the clean beef and unburnt paste to a clean wide pan, then resume on lower heat with a small splash of warm water only if the mixture is too dry to move.

Transfer clean food to a clean panDo this now
- Turn off the heat.
- Lift out the clean portion without scraping the black base.
- Resume in a clean pan at lower heat.
Do not do this
- Do not stir burnt material back through the dish.
- Do not add a large amount of water.
- Do not keep cooking in the scorched pan.
Why this happened
During the final reduction, coconut solids and sugar can scorch faster than the beef changes. A burnt base will keep releasing bitterness even after the heat is lowered.
The next correct state
The paste drags but still moves under the spatula, smells toasted rather than acrid, and contains no black fixed patches.
